1,575 Grams Wagyu Beef Brisket Trim | 675 Grams Pork Back Fat | 5.6 Grams Cure #1 | 36 Grams Salt | 8 Grams Cracked Black Pepper | 4 Grams Garlic Powder | 4 Grams Onion Powder | 3 Grams Mustard Powder | 2 Grams Smoked Paprika | 300 Grams Cooked Bacon, Diced Small | 180 Grams Cheddar Cheese, Small Diced | 200 Grams Pickles, Very Well Drained and Finely Diced | 30 Grams Tomato Sauce | 15 Grams Yellow Mustard | 10 Grams Worcestershire Sauce | 10 Grams Sugar | 50 Grams Milk Powder | 150 ML Iced Water |
Instructions
1. Prepare the meat base - Combine the Wagyu beef brisket trim and pork back fat in a large mixing bowl or grinder tray. Keep everything well chilled during preparation.
2. Grind the mixture - Pass the meat and fat through a coarse grinding plate. For a finer texture, grind a second time if desired.
3. Add seasoning and cure - Sprinkle in the cure, salt, pepper, garlic powder, onion powder, mustard powder, and smoked paprika. Mix thoroughly until evenly distributed.
4. Develop the bind - Add the milk powder and slowly pour in the ice-cold water while mixing. Continue mixing until the mixture becomes sticky and well-emulsified.
5. Fold in fillings - Gently fold through the diced cooked bacon, cheddar cheese cubes, and finely chopped, well drained pickles.
6. Add sauces and balance flavours - Mix in the tomato sauce, yellow mustard, Worcestershire sauce and sugar. Ensure everything is evenly incorporated without overworking the mixture.
7. Rest the mixture (recommended) - Cover and refrigerate for at least 1-2 hours to allow flavours to develop and the mixture to firm up.
8. Stuff the sausages - Fill prepared sausage casings using a sausage stuffer, taking care to avoid air pockets. Twist into your preferred sausage lengths.
9. Cook to perfection - Grill, smoke, or pan-fry over medium heat until fully cooked through and nicely browned on the outside.
10. Serve and enjoy - Serve hot on a bun with your favourite burger toppings, or enjoy on their own for the full cheeseburger experience.
