Ingredients

850 grams Chicken Thigh | 150 grams Chicken Skin | 16 Grams Salt | 4 Grams Black Pepper | 5 Grams Minced Garlic | 3 Grams Chopped Parsley | 2 Grams Chopped Thyme | 2 Grams Lemon Zest | 50 ML Ice Water |

Instructions

1. Dice the chicken thigh and chicken skin. Chill until very cold.
2. Combine the salt, pepper, garlic, parsley, thyme, and lemon zest in a bowl or mixing tub.
3. Grind the diced meat through a 6mm plate, mix with the seasoning blend, then gradually add iced water and mix until all bound.
4. Fill into sausage casings of your choice and cook to your liking. (These sausages are great grilled or pan-fried).
