The Carnivore Collective Salami Pricker is used for fresh and cured sausage production as well as cured meats/salami making. The purpose of this gadget is to remove the excess air that is trapped inside your casings. The needles on this salami pricker are fine and sharp enough to penetrate the casing without causing it to tear, creating a hole large enough to expel the excess air yet small enough to avoid any bacteria or other contaminants to penetrate and infect your meat.
